No chemicals are used in the production of Wholesome Sweeteners Organic Zeroâ„¢. Organic cane sugar is liquefied and a starch solution formed. Fructose is separated from the starch by enzymatic hydrolysis. An organically approved fermenting agent (Moniliella polinis) is added to the fructose and that starts the fermentation process. This solution is then sterilized and filtered. Finally, the solution is concentrated by heating to evaporate the excess liquids and crystallized. The process uses approximately 2lbs of Organic Cane Sugar to produce 1lb of Organic Zero.
