Chocolate Chip Banana Oatmeal Bars

Ingredients

  • Cooking spray

  • 4 large ripe bananas

  • 2 large eggs

  • 3/4 cup packed light brown sugar

  • 1/2 cup vegetable oil

  • 2 tsp. pure vanilla extract

  • 1 tsp. baking soda

  • 3/4 tsp. kosher salt

  • 2 1/2 cups (200 g.) old-fashioned oats

  • 1 1/2 cups (180 g.) all-purpose flour

  • 1 cup (6 oz.) semisweet chocolate chips, divided

Directions

    1. Step 1Preheat oven to 350°. Grease a 13″ x 9″ metal baking pan with cooking spray and line with parchment, leaving an overhang on 2 long opposite sides.
    2. Step 2Peel bananas. In a medium bowl, mash 3 ripest bananas with a fork until smooth (you should have about 1 1/4 cups). Chop remaining banana into 1/4″ pieces.
    3. Step 3In a large bowl, lightly whisk eggs until blended. Add brown sugar, oil, vanilla, baking soda, and salt and whisk until incorporated. Whisk in mashed banana until thoroughly combined, then switch to a rubber spatula and fold in oats and flour. Fold in 3/4 cup chips and chopped banana.
    4. Step 4Pour batter into prepared pan; smooth with spatula. Sprinkle with remaining 1/4 cup chips.
    5. Step 5Bake bar until firm in the center and golden brown around the edges, 23 to 27 minutes. Let cool.
    6. Step 6Using parchment overhang, lift bar out of pan and transfer to a cutting board. Slice into pieces and serve.
