The Best-Ever Bean Recipe

Ingredients:

  • 2 tablespoons olive oil
  • 1 teaspoon minced garlic, or to taste
  • 2 tablespoons tomato paste
  • 1 (15 ounce) can of white beans, drained
  • 1 1/2 cups shredded mozzarella
  • Boiling water
  • Salt and pepper

Instructions:

  1. Preheat the oven to 450 degrees F (220 degrees C).
  2. Heat an oven-proof skillet to medium-high and add the olive oil and garlic. Let the garlic cook until it’s just brown.
  3. Add the tomato paste and stir until combined with the olive oil.
  4. Add the beans and stir to combine. Add boiling water a little bit at a time to loosen the mixture. I usually end up using around 1/4 cup of water.
  5. Season with a little salt and pepper, then sprinkle the mozzarella all over the top.
  6. Place the skillet in the oven and cook for about 10 minutes, or until bubbly and cheese is golden brown.

What to Do If You Don’t Have an Oven-Proof Skillet

The good news is that you technically don’t need an oven-proof pan for this recipe. While you won’t get the delicious browned cheese bits, you can still enjoy gooey, melty cheese. Simply pop a lid over the pan after you’ve scattered cheese over the beans and let heat through.
