Potato Latkes with Applesauce

Ingredients

  • 2 cups peeled and grated potatoes
  • 1/4 cup grated onion
  • 1 large egg, beaten
  • 2 tbsp all-purpose flour
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup vegetable oil
  • 2 cups unsweetened applesauce

Instructions

    1. Place the grated potatoes and onion in a clean kitchen towel. Squeeze out as much liquid as possible.
    2. In a large bowl, mix the potatoes, onion, egg, flour, salt, and pepper until well combined.
    3. Heat the vegetable oil in a large skillet over medium-high heat until it shimmers, about 350°F.
    1. Drop 1/4 cup portions of the potato mixture into the hot oil, flattening slightly with the back of a spoon.
    2. Fry the latkes for 3-4 minutes on each side, or until deep golden brown and crispy.
    3. Transfer the cooked latkes to a paper towel-lined plate to drain any excess oil.
