Soda Can Chicken
What You’ll Need
1/2 cup barbecue sauce
1 (12-ounce) HALF-FULL can diet lemon-lime soda
1 tablespoon dried basil
2 teaspoons paprika
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 whole (3-1/2-pound) chicken, skin removed
What to Do
Remove top oven rack. Preheat oven to 350 degrees F. Add barbecue sauce to half-full can of soda.
In a small bowl, combine basil, paprika, onion powder, garlic powder, salt, and pepper; mix well and rub evenly over chicken.
Place cavity of chicken over soda can so that chicken is sitting on can, then place can on a rimmed baking sheet. Bake 1-1/4 to 1-1/2 hours, or until no pink remains and juices run clear.
Cut chicken into serving-sized pieces and carefully pour remaining sauce from can over chicken.
