Ingredients:
- 2 tablespoons olive oil
- 1 teaspoon minced garlic, or to taste
- 2 tablespoons tomato paste
- 1 (15 ounce) can of white beans, drained
- 1 1/2 cups shredded mozzarella
- Boiling water
- Salt and pepper
Instructions:
- Preheat the oven to 450 degrees F (220 degrees C).
- Heat an oven-proof skillet to medium-high and add the olive oil and garlic. Let the garlic cook until it’s just brown.
- Add the tomato paste and stir until combined with the olive oil.
- Add the beans and stir to combine. Add boiling water a little bit at a time to loosen the mixture. I usually end up using around 1/4 cup of water.
- Season with a little salt and pepper, then sprinkle the mozzarella all over the top.
- Place the skillet in the oven and cook for about 10 minutes, or until bubbly and cheese is golden brown.
What to Do If You Don’t Have an Oven-Proof Skillet
The good news is that you technically don’t need an oven-proof pan for this recipe. While you won’t get the delicious browned cheese bits, you can still enjoy gooey, melty cheese. Simply pop a lid over the pan after you’ve scattered cheese over the beans and let heat through.
