Spicy Cranberry Chicken Wings

Ingredients

  • 2 tsp. baking powder

  • 1 tsp. smoked paprika

  • 2 1/2 tsp. kosher salt, divided

  • 3 tsp. chipotle chili powder, divided

  • 1 1/4 tsp. garlic powder, divided

  • 2 lb. chicken wings

  • 1 1/4 cups frozen cranberries

  • 1/3 cup (71 g.) packed light brown sugar

  • 4 Tbsp. Dijon mustard, divided

  • 3 Tbsp. fresh lime juice, divided

  • 2 Tbsp. cranberry juice

  • 1/4 cup mayonnaise

  • Cooking spray

  • Thinly sliced chives, for topping (optional)

Directions

    1. Step 1In a large bowl, combine baking powder, paprika, 2 tsp. salt, 1 1/2 tsp. chili powder, and 1 tsp. garlic powder. Pat wings dry, add to bowl with spice mix, and toss to coat. Transfer wings to a wire rack set in a baking sheet. Refrigerate until chilled, about 1 hour.
    2. Step 2Meanwhile, in a small saucepan over medium heat, combine cranberries, brown sugar, 2 Tbsp. mustard, 2 Tbsp. lime juice, and remaining 1 1/2 tsp. chili powder and 1/2 tsp. salt. Cook, stirring occasionally, until jammy, 5 to 6 minutes. Let cool slightly, then transfer to a small blender or food processor. Add cranberry juice and blend until smooth.
    3. Step 3Arrange a rack in center of oven; preheat to 425°. In a small bowl, combine mayonnaise and remaining 2 Tbsp. mustard, 1 Tbsp. lime juice, and 1/4 tsp. garlic powder; set aside until ready to use.
    4. Step 4Shift wings to one side of rack and spray bare side with cooking spray. Shift wings to other side of rack and spray second bare side with cooking spray. Spread wings in a single layer again, turning skin side up.
    5. Step 5Roast wings until starting to crisp on the outside, about 30 minutes.
    6. Step 6Transfer wings to a large bowl and add all but 2 Tbsp. cranberry sauce. Toss until coated, then return wings to wire rack.
    7. Step 7Continue to roast until wings are cooked through and cranberry sauce is caramelized, 12 to 15 minutes more.
    8. Step 8Transfer wings to a platter. Brush with reserved 2 Tbsp. cranberry sauce and top with chives (if using). Serve with reserved garlic mayo alongside.
