German Salad
Ingredients

Original recipe (1X) yields 8 servings
• 2 tablespoons vegetable oil
• 2 tablespoons lemon juice
• 2 teaspoons honey
• 1/2 teaspoon salt
• 1/2 teaspoon grated fresh ginger
• 1 pound carrots, peeled and coarsely shredded
• 1 medium pink lady apple – cored, peeled, and coarsely shredded
• 2 tablespoons chopped hazelnuts or walnuts
• 1 tablespoon fresh parsley
Directions
1. Whisk together oil, lemon juice, honey, salt, and ginger in a bowl until combined. Add carrots and apple; toss to combine.
2. Cover and marinate in the refrigerator for at least 1 hour before serving.
3. Garnish with hazelnuts or walnuts and parsley.
