How to Make Vegetarian Lasagna
3cupsricotta
3cupsshredded mozzarella cheese, divided
1cupfreshly grated Parmesan, divided
2Tbsp.Italian seasoning
1egg, beaten
Kosher salt
Freshly ground black pepper
Cooking spray
1cup(32-oz.) jar marinara
1(16-oz.) box no-boil lasagna noodles
Thinly sliced basil, for garnish
Freshly chopped parsley, for garnish
Directions
Step 1Preheat oven to 350°. In a large bowl, stir until combined ricotta, 2 cups mozzarella, 1 cup Parmesan, Italian seasoning, and egg. Season with 1/2 tsp. salt, and a few grinds (6 to 8) pepper.
Step 2Grease a 9″-x-13″ baking dish with cooking spray. Spread 1/2 cup marinara on bottom of dish. Add a layer of noodles, then ¾ cup sauce and ¾ cup ricotta/cheese mixture. Repeat 4 to 6 times (depending on how deep your pan is), ending with sauce. Top with remaining 1 cup mozzarella.
Step 3Spray foil with cooking spray. Cover lasagna (sprayed-side down), and bake for 35 minutes. Remove foil and raise temperature to 400°. Cook until cheese has melted, about 10-15 minutes more. Let rest for 15 minutes.
Step 4Garnish with basil and parsley before serving.
